Having lived in UAE for over four years, I developed a deep fondness for Arabic food. Being a vegetarian and a healthy eater, I found innumerable delicious options for myself there. Therefore even though I do not live in UAE anymore, I find myself craving my favourite dishes every now and then.
Yesterday I woke up craving Fattoush. I find Fattoush to be an extremely satisfying Salad. It’s so delicious that it is difficult to believe how good it is for us. Fattoush is made using salad greens, cucumber, red radish, etc and is dressed in a sweet and tangy Vinaigrette made with Pomegranate Molasses and Sumac. Fried Pita Crisps give this salad an irresistible crunch.
When I decided to make Fattoush yesterday, I realized I had run out of Pomegranate Molasses. Since this is not an ingredient that is easily available where I live, I decided to make my own.
I juiced three large Pomegranates and reduced them until thick. I then let the sticky reduction cool down and added Sumac, Salt and Lime Juice to it and refrigerated the Vinaigrette to use once the salad was plated.
This salad dressing can be stored in the refrigerator for a week. It not only adds a delicious zing to your Salads, infact it can also be used to marinate Chicken, Tofu etc.

POMEGRANATE MOLASSES
Ingredients
- 2 large Pomegranate
- 1 tsp Sumac
- 1/8 tsp Salt
- 2 tbsp Olive Oil
Instructions
- Deseed the Pomegranate and juice them
- Transfer to a pan and simmer on a low flame until reduced to a thick sticky consistency
- Transfer to a bowl and let it cool
- Add Salt, Sumac and Olive Oil and mix well
- Refrigerate the dressing and use when desired.
