The trick to adding any ingredient to a classic recipe I feel is balance. In this case, the more beetroot you add, the deeper the colour gets. I have added just a small piece of roasted Beetroot so that we have a stunning baby pink colour without compromising on the taste. The aim is always to have the most flavourful food that looks great as well!

Beetroot Hummus
A silky Hummus made with roasted Beetroot. It tastes even better than how it looks.
Ingredients
- 1 Cup Boiled Chickpeas
- ½ Small Roasted Beetroot More for extra color
- 1 Piece Lime Juice
- 4-5 Cloves Garlic
- Salt To taste
- 1 tbsp Tahina
- ¼ Cup Aquafaba
- 1 tbsp Olive Oil
- 1 tbsp Zattar
- 1 tbsp Pine Nuts
Instructions
- Soak the chickpeas overnight and boil in a pressure cooker with some salt till soft.
- let them cool to room temperature
- To a blender add the chickpeas, beetroot, salt, tahina, lime juice, aquafaba and garlic cloves.
- Blend to a smooth paste. Add more aquafaba if needed.
- Transfer to a bowl. Top with olive oil, herbs and pine nuts.
- Refrigerate for an hour and enjoy!!
Beautiful looking stuff so am sure it will taste superb also. Wanted to know if I can make a paste of seasame seeds at home directly for the tahina or do I need to buy it?
Thank you Anuradha. Although you can make tahina at home with Sesame seeds, I strongly recommend that you buy a jar or store bought Tahina if you are looking for a silky smooth Hummus.

Thank you for the recipie. I made this hummus today. It turned out fine and the flavour developed over time. Trying to increase the garlic flavour, I added a little extra. I will watch out for it next time.

What is aquafaba?
Boiled Chickpeas water.
Could you please tell me if aquafaba is the boiled chickpea water? Because, i too made beetroot hummus but didn’t aaded the chickpea water in it. So just wanted to make sure, where m going wrong. Thanks so much!
Hi Rashi, yes please add boiled and cooled Chick Pea water. It makes the Hummus creamy.
