Summer is here with a vengeance, and honestly it’s not my favourite time of the year. It’s the only time I want to be as far away from my kitchen as possible.
This delicious Pasta Salad is the perfect summer recipe that comes together effortlessly and is such a winner in our home. Simply serve your favourite pasta (I have used whole grain bow tie), your favourite vegetables or salad greens (I’ve used Olives, Cucumber, Cherry Tomatoes, Red Bell Peppers), add fresh Basil or whatever herbs you happen to have. Some delicious crumbly Feta cheese, some nuts and seeds of your choice, a generous drizzle of Extra Virgin Olive Oil and a squeeze of Lime. You can also add some mustard and honey or any other vinaigrette/ salad dressing of your choice.
And here you have it, a beautiful vibrant delicious and healthy meal, ready for you and your family in minutes.

PASTA SALAD
Ingredients
- 1 Cup Bowtie Pasta cooked
- 100 gms Feta Cheese
- 10-12 Olives
- 10-12 Cherry Tomatoes
- 2 tbsp Pumpkin Seeds
- 1 Green Bell Pepper sliced
- 1 Red Bell Pepper diced
- 1 large Cucumber sliced
- 1 1 juiced
- Salt to taste
- 2 tbsp Olive Oil
- 1/4 tsp dried Oregano
- 1/4 tsp dried Basil
Instructions
- Add all the ingredients to a large mixing bowl.
- Mix with a light hand until everything is mixed well but holds shape.
- Chill in the refrigerator until ready to eat. Enjoy
